Chicken Goo!

Disgusting name, good stuff.  This is one of the favorites in my house, and so easy anyone can throw it together.   Make sure you always have the ingredients in the pantry, and you'll always have a quick meal in case of emergencies.

Chicken Goo (serves 2-4)

One can of mixed vegetables, like Veg-All, do not drain
One small can of chicken (any kind), do not drain
Two cans of cream of chicken soup.

Open all cans and dump in pot.  Don't drain the liquid off of anything first.  Heat up.  Salt & pepper to taste.  Serve spooned over rice or noodles.  Tastes a bit like chicken pot pie without the crust.

Variations:
Any kind of canned or frozen veggies can be used if you don't have Veg-All.
Sometimes I like to add a small can of mushrooms.
If you are out of cream of chicken soup, you can use cream-of-anything else you have! 
This is also good on top of biscuits or toast if you don't have noodles or rice.

The former owner of Hillbilly Housewives, Maggie, has apparently sold that site and started a new, similar one called Frugal Abundance. 

This recipe for Creamy White Bean Soup sounds really tasty, and pretty easy, though there is a bit of vegetable chopping involved.

Hillbilly Housewife is an interesting, no-nonsense site that I've been using for years.  One new thing that they have added this year is a section on Frugal Holiday Recipes.  So far they are mostly Thanksgiving recipes but they could easily be used for Christmas or other holidays as well.
